Cheesy Chicken Pasta

1 box dry whole wheat spaghetti
1 lb. 2% Velvetta cheese
12.5 ounce can chicken breast, drained and flaked
1 can 98% Fat Free cream of mushroom soup
1 can 98% Fat Free cream of chicken soup
10 ounce can Rotel
4 ounce can mushroom stems and pieces, drained
1/2 cup water
1 small onion, diced
1 medium green pepper, diced

Spray slow cooker with nonstick cooking spray. Combine all ingredients in slow cooker and stir to mix well. Cook on Low 2 - 3 hours. Stir again just before serving.

Slow Cooker Taco Chicken

1 can whole kernel corn, drained
2 boneless skinless chicken breasts
1 envelope taco seasoning
1 8 ounce jar salsa
1 can black beans or kidney beans
1 cup Fat Free or 2% cheese

Spray inside of crockpot/slow cooker. Layer the corn, chicken breasts, taco seasoning, salsa, beans. Cook on low for 6 - 8 hours. Remove chicken breasts and shred meat. Put back into pot and stir all together. Top with cheese. Let sit until cheese melts.

Note: This is delicious on a whole wheat tortilla or with baked tortilla chips. Be sure to account for the extra points.

Garden Bake

1 cup chopped zucchini
1 large tomato chopped
1 cup chopped onion
1/3 cup grated Parmesan cheese
1/2 cup Reduced Fat Bisquick
1 cup Skim milk
1/2 cup egg beaters
salt and pepper to taste

Heat oven to 400 degrees. Grease 9 inch pie plate with cooking spray. Layer zucchini, tomato, onion and cheese in pie plate. Stir remaining ingredients until well blended. Pour into pie plate. Bake 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Garlic Green Beans

2 garlic cloves, sliced
3 cups reduced sodium chicken broth (99% fat free)
1 pound fresh green beans

Heat a nonstick saucepan over medium high heat. Saute garlic cloves 2 minutes. Add broth and green beans. Simmer 20 minutes.

Guilt Free Onion Rings

1/4 cup corn flakes
1/8 tsp salt
2 medium onions
2 egg white (I use egg beaters)
1/4 cup panko (Japanese breadcrumbs)
Cooking spray

Preheat oven to 450 degrees. Spray a large baking sheet with cooking spray. In a shallow pie plate combine panko, cornflakes, salt and pepper. Dip onions into egg whites, then in crumb mixture. Arrange onion rings in a single layer on the prepared baking sheet. Spray onion rings again with cooking spray.

Bake 12 to 15 minutes or until the onions are tender and the coating is crisp and golden.

Tater Tot Casserole

1 pound extra lean ground beef
1 onion, chopped
1 can fat-free cream of chicken soup
1 can fat-free cream of mushroom soup
72 onion flavored tater tots
3/4 cup finely grated 2% cheddar cheese

Brown ground beef and onion in pan. Drain. Mix soups with beef mixture. IN 9x12 pan, spray with cooking. Put tater tots on bottom of pan, and put ground beef mixture on top. Sprinkle cheese on top. Bake at 350 degrees for 1 hour.

4.5 servings, 12 servings

Note: If you use simply potatoes instead of tater tots, and use ground turkey instead of the beef, you will get 6 servings for 6 points.)

Endless Possibilities Angel Food Cake


1 box Betty Crocker (1-Step) angel food cake mix

*see variations below directions*

Directions:
Preheat oven 350 Mix the angel food cake mix and desired flavor ingredients together and beat by hand until blended. Pour into ungreased 9x13 pan (or muffin tin) and bake for 35-40 mins (muffins bake 15-18 mins). Cool upside down for best results.

Lemon -- 1 C + 3 T water, 2 T lemon juice and 2 t grated lemon peel

Orange Citrus -- 1-1/4 C water and 2 t grated orange peel

Cherry -- 1 can (20 oz) light cherry pie filling

Black Forest -- add 1/2 C cocoa to Cherry version

Cotton Candy -- 1 small (3.4 oz) s/f Jello, any flavor, 1-1/4 C water.

Margarita -- 1 C+ 2 T water, 2 T fresh lime juice and 1-1/2 t grated lime rind

Pineapple -- 1 (20 oz) crushed pineapple in juice

Pina Colada -- add 1 T each coconut & rum extracts to pineapple directions

Pumpkin -- 1 (15 oz) pumpkin, 3/4 C water, 1T vanilla & 1T pumpkin pie spice (or spices below)

Spiced -- 1-1/4 C water, 1-1/2 t cinnamon, 1/2 t ginger, 1/2 t nutmeg and 1/4 t ground cloves

Diet Coke Sloppy Joes


1 pound raw extra lean ground beef
1 medium onion(s)
1 1/2 Tbsp all-purpose flour
1 cup Diet Coke
2/3 cup ketchup
2 Tbsp vinegar
1 Tbsp Worcestershire sauce
2 tsp dry mustard

Instructions

Brown beef and onion in a large skillet. Drain well. Stir in remaining
ingredients as listed. Mix well. Cover and simmer for 30 minutes.


3 points, 6 servings (Don't forget that buns add points. Go for either potato hamburger buns or a whole wheat bun for less points.)

Orzo-Broccoli Pilaf


2 tsp olive oil
1 c fresh muchrooms
1/2 c chopped onion
2/3 c dried orzo (rosamarina)
1 14 1/2oz can reduced soduim chicken broth
1/2 c shredded carrot
1 tsp dried marjoram crushed
2 c small broccoli florets

Instructions


In a large saucepan heat oil ove med-high heat. Add mushrooms and onion; cook till tender. Add orzo. Stir about 2 min. or until orzo is lightly brown. Remove from heat. Carefully stir broth, carrot, marjoram and 1/8 tsp pepper into orzo mixture. Bring to a boil, reduce heat. Cover; simmer for 15 min. Remove from heat; stir in broccoli. Cover let stand 5 min.

Better Than Sex Cake


1 box Devil's Food cake mix
10oz diet cola
1 egg white
6oz FF caramel ice cream topping
7oz RF or FF sweetened condensed milk
1 cup English toffee bits
1 container FF cool whip

Instructions

Mix cake mix, egg white and diet soda. Bake as directed in a 9x13 pan. During the last few minutes of baking, put caramel and condensed milk in a saucepan and stir on medium low heat until mixed. Take cake out of the oven and poke holes all over the top (use something wide like a wooden spoon). Pour caramel mixture over cake, filling in holes. Sprinkle toffee bits over the top, saving some for later. Cool completely. Cover with container of Cool Whip and sprinkle with remaining toffee bits. Put in fridge until ready to serve.

Chicken, Orzo and Spinach Casserole

3 cups cooked boneless skinless chicken breasts,cubed
2/3 cup uncooked orzo
1 8 ounce package sliced fresh mushrooms
10 oz. package frozen spinach, thawed and well drained
1 can fat free cream of mushroom soup
1/2 cup reduced fat mayo
2 teaspoon lemon juice
1/2 teaspoon pepper
3/4 cup shredded reduced fat
Monterey jack cheese
1/4 cup Italian seasoned breadcrumbs

Instructions

Cook orzo as directed on package, set aside. Saute mushrooms in large skillet coated with cooking spray. Remove from heat. Stir in pasta, chicken, spinach, soup, mayo, pepper and lemon juice. Sprinkle with cheese and breadcrumbs. Bake at 350 for 30 minutes.

Broccoli Salad

4 cup broccoli
1/4 cup red onion(s)
2 Tbsp sugar
2 Tbsp apple cider vinegar
6 Tbsp Kraft Miracle Whip Light Salad Dressing
2 Tbsp sunflower seeds
3 Tbsp Raisins

Instructions


Finely chop broccoli and red onion and set aside. Place remaining ingredients in a bowl. Mix well. Add broccoli and onion, toss until coated. Chill until ready to use.

One Point Chili


1 pound ground turkey
1 onion chopped
2 zuchinni diced
2 yellow squash diced
2 stalks of celery diced
2 green peppers diced
1 can black beans, rinsed and drained
2 cans diced tomatoes
1 pkg chili mix

In a non-stick skillet brown turkey with onion until cooked.

In a dutch oven or large pot add turkey, onion and other ingredients, bring to a boil then simmer for 45 minutes. Serving Size 1 cup

Beef and Cheese Enchiladas

1 pound 95% lean/5% fat raw ground beef
1 small onion(s)
1/2 tsp garlic salt
1/2 tsp ground cumin
1/8 tsp ground red pepper
1/8 tsp table salt
1/8 tsp black pepper
1/2 tsp cilantro
6 oz Kraft 2% Finely Shredded Sharp Cheddar Cheese
11 Whole Wheat or Low Carb Tortilla(s)
20 oz Old El Paso Medium Enchilada Sauce

Brown extra lean ground beef with diced onion. Add seasonings. Spray oblong cake pan with pam cooking spray and pour 1/2 of a 10oz.can of red enchilada sauce into the bottom of the pam. Spoon 3-4 Tablespoons of meat into center of a tortilla along with a sprinkle of the shredded 2% cheese. Roll up one a time and lay side by side, seam side down, in the pan. Pour remaining enchilada sauce on top and sprinkle remaining cheese on top of each enchilada. Bake uncovered on 350 for 20 minutes. Let sit 5 minutes before serving.

Note: Ground Turkey can also be used.

No Pudge Brownies Knock Off

1/2 cup unsweetened cocoa
3/4 cup flour
1 tbsp cornstarch
1/4 tsp baking soda
1/4 tsp salt
1 1/4 cup Splenda
2/3 cup FF vanilla yogurt

1. Spray pan with Pam.
2. Mix together bake at 350 for 30-35 minutes.

Weight Watchers Chex Mix

10 cup(s) Rice chex cereal
1box Kashi "Go Lean" cereal
½ bag Pretzels

7 cup(s) Popcorn, air popped
Pam butter spray
Package(s) Ranch seasoning mix
1 package(s) Taco seasoning
Onion powder
Garlic powder


Take large roasting pan and spray bottom and sides with Butter Pam. Put in first 4 ingredients and mix with large spoon, spraying several times with the Butter Pam. Sprinkle on the Ranch dressing evenly and stir to mix; sprinkle on the taco seasoning and stir to mix. May add the garlic and onion powder to your own taste, mixing well.

Bake at 250 degrees for 90 minutes; stir at 30-minute intervals and spray with a little more Butter Pam. Cool and place in airtight container.

Baked Salmon


2 cloves garlic, minced

3 Tablespoons olive oil

1 teaspoon dried basil

1 teaspoon salt

1 teaspoon ground black pepper

1 Tablespoon fresh lemon juice

1 Tablespoon fresh parsley, chopped

4 thin lemon slices

2 (4 ounce) salmon fillets

In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally. Preheat oven to 375 degrees. Place entire glass dish with marinade into oven. Cover salmon with the lemon slices, and bake 15 minutes, until easily flaked with a fork.

I served this dish with brown rice and spinach sauted in cooking spray.
